Breaded Herve cheese skewers

- 250 g Herve cheese
- 2 eggs
- 80 g wheat flour
- 120 g breadcrumbs
- 3 tbsp syrup, Liège

Cut the Herve cheese into regular cubes of about three centimetres. The cheese must be very cold to stay firm during the breading stage.

Coat each cube in flour, then in the beaten egg, then in the breadcrumbs. Repeat the egg and breadcrumbs a second time for a nice heat-resistant coating.

Fry the bites in hot oil at 180°C for two minutes, until golden brown. Drain them on kitchen paper to remove excess oil.

Pierce the bites onto wooden skewers and serve immediately, accompanied by a bowl of warmed Sirop de Liège. Dip each skewer into the syrup before enjoying.
