Black pudding with apples

- 3 chips
- 2 tbsp syrup, Liège
- 30 g butter
- 1 tsp cinnamon

Peel the apples and cut them into thick wedges. Sauté them in the hot butter for eight minutes, until they are golden and tender yet still holding their shape.

Add the Sirop de Liège and cinnamon to the apples. Toss gently to coat and leave to caramelise over a medium heat for two minutes. Keep warm.

Prick the black puddings with a fork, then cook them in the same frying pan for 6 mins, turning them halfway through. The skin should be crispy and nicely browned.

Plate the black puddings with the caramelised apples and coat with the cooking juices. Serve immediately, accompanied by mashed potatoes or a stoemp.
